Blueberry Gobs, 4th of July Awesomeness, and Sugar Acid Protection

Growing up, I never thought much about the 4th of July. It was a day for fireworks, I suppose, but that was where the fun ended. We would drive to the state fairgrounds, watch the fireworks show, and go home.
Things are a wee bit different these days.
Now the 4th of July is about the 3rd of July or the 5th of July, depending on the year. We gather with the “chosen family” (i.e. friends) and do it up BIG the day before or after the actual holiday. And when I say BIG, I mean there is all of the laughter, a few tears (because we’re laughing that hard), lots of fireworks and sparklers and such, and the biggest mountain of food you can imagine.
This year these Blueberry Gobs are going to make an appearance. Because ZOMG BLUEBERRY GOBS WHY DID I NOT THINK OF THIS SOONER?
This recipe makes about 3 dozen gobs, which if you do the math, is a lot of individual cookies. They’re totally worth it, though, because you get to eat cream cheese frosting sandwiched by two cookies. That’s some happy news right there.
Blueberry Gobs
Cookies
4 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons salt
1 cup butter, softened
2 cups white sugar
2 eggs
2 teaspoons vanilla extract
½ cup heavy cream
1 pint fresh blueberries
Frosting
1 8-oz package cream cheese
½ cup butter, softened
1 teaspoon vanilla extract
4 cups powdered sugar
- Preheat the oven to 375 degrees. Toss some parchment paper on a few cookie trays.
- In a medium mixing bowl, whisk together the flour, baking powder, and salt.
- Toss the butter and sugar into a large mixing bowl. Beat with an electric mixer until creamy. Add the eggs and mix a little more. Then add the heavy cream and mix some more. Finally, add the vanilla and mix some more.
- Slowly add the flour mixture to the butter mixture, mixing as you go.
- Once everything is all mixed together, gently stir in the blueberries. Some of them will break open, which is totally okay. You just don’t want all of them to break open.
- Drop the cookie dough one heaping teaspoon at a time onto the parchment paper. Bake at 375 degrees for 12-14 minutes. Note: If you want prettier cookies, roll the heaping teaspoon of dough into a little ball and then flatten it with the palm of your hand. That will help it stay rounder.
- Allow the cookies to cool on the cookie sheet for a few minutes before transferring to a wire rack.
- Lather, rinse, repeat. Or rather, drop more cookie dough and bake it until you have all of the cookies made.
- While all that baking is happening, go ahead and get started on the cream cheese frosting that goes in the middle of these gobs. Throw the cream cheese, butter, and vanilla in a mixing bowl and mix well. Slowly add the powdered sugar until you have a frosting that will make you want to sit down on the couch for some alone time with a spoon and that frosting.
- But resist! You need the frosting for the gobs!
- Once the frosting is made and the gobs have cooled, spread some frosting on the bottom of a cookie. Sandwich it with another cookie. Keep doing that until you’re done.
- With any luck, you will end up with an odd number of cookies and no choice but to eat that lonely cookie. Such a hardship.
- I added sprinkles to my gobs because sprinkles, everybody needs sprinkles.

I have to say my trifle. Normally that consits of staweberries, pound cake and blueberries.

I like to make strawberry short cakes but on the 4th i add blueberries.
I will be using blueberrys, bananas and strawberries to make something that resembles a flag.

I like to make individual strawberry shortcakes with blueberries and whipped cream.
I like to make a healthy red, white and blue parfait. I puree strawberries and blue berries (separately). Then I mix cottage cheese, plain yogurt (I us Fage'), true lemon and a bit of stevia or agave in a food processor. I then layer the berries and cheese mixture in clear plastic glasses. They are delicious and good for you.

I don't have one. However, I have seen a recipe for blueberry lasagna floating around on pinterest that looks like another delicious blue dessert for the 4th. It could totally be topped with red and white sprinkles too :)
We do homemade ice cream pops with the kids, they have a blast and of course they're red, white and blue to celebrate. It's perfect for the hot weather!
