It must be summer because we've reached the point where I am trying to make fresh fruit fit into everything. Sure you can put pineapple in your Honey Nut Cheerios, Mila. Why not?
There has been some legit fruit usage as well. Like Blueberry Peach Cobbler.
I have four different recipes for this, each one fantastic in its own way. This one is Mila's favorite because the cobbler part of it turns out just a little crunchy and the peaches are super goopy and, really, Mila is an easy one to please. See?
Blueberry Peach Cobbler
3 peaches, sliced
1 pint blueberries
1/4 cup granulated sugar
1 teaspoon cornstarch
1 teaspoon almond extract
1 teaspoon allspice
1 teaspoon lemon juice
1/2 cup butter, softened
2/3 cup granulated sugar
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon almond extract
1 large egg
1. Preheat the oven to 350 degrees.
2. Toss the peaches, blueberries, sugar, cornstarch, almond extract, allspice, and lemon juice together in a 9" square baking dish. Stir things up gently so that the fruit is covered with the other stuff.
3. In a large mixing bowl, mix the butter and sugar until smooth. Gradually add the flour, salt, baking powder, and almond extract. Mix a little more. Add the egg and mix. You should end up with something the consistency of cookie dough.
4. Spoon the dough mix over top of the fruit and smooth out the top.
5. Bake at 350 degrees for 30 - 35 minutes, or until the top is lightly browned.
5. Serve warm with ice cream or whipped cream. Your family will adore you for it.
