Really?
Well, that's OK because I bought enough too much to make up for the both of us. And then some. Last year we ran out before trick-or-treating ended, so this year I was paranoid. It turns out I was a bit too paranoid because now I have approximately a lifetime supply of chocolate sitting in our dining room.
It was time to get serious about finding ways to use it all.
And that is how it came to pass that I made Rice Krispies Treats loaded with Reese's Peanut Butter Cups and Snickers bars. The idea originated from a twitter conversation months ago (thanks, Katie!).
If you think that sounds like a heavenly idea, you are right. So go dig in your kids' Halloween buckets and scrounge together some Reese's and Snickers.
You won't be sorry.
Until you run out and have to make another batch, that is.
Chocolate and Peanut Butter Loaded Rice Krispies Treats
2 Tablespoons butter
1-10 oz bag mini marshmallows
6-8 Reese's Peanut Butter Cups, chopped
6-8 Fun Size Snickers Bars, chopped (cut in half the long way, then cut each half three times)
6 cups Rice Krispies cereal
1/4 cup chocolate chips (optional)
1. Chop the candy. Set aside a handful of chopped Snickers bars to use as a topping, if desired.
2. Place the butter and marshmallows in a large microwave-safe bowl. Cook microwave for two minutes, or until the marshmallows get all puffy and soft.
3. Stir to combine the marshmallows and butter.
4. Add the chopped candy. Stir and stir until it's well-blended.
5. Add the Rice Krispies. Stir and stir until everything is well-blended.
6. Press the Rice Krispies into an 8x8" pan.
7. If you want, toss the handful of chopped Snickers on top. If you don't want to, then you should probably just eat the Snickers you set aside.
8. If you want the chocolate drizzle on top, place the chocolate chips in a plastic bag and microwave until softened. It took my microwave about 30 seconds to completely melt.
9. Cut a corner off of the plastic bag and squeeze the chocolate out as you swirly-swirly around the top of the Rice Krispies treats.
10. Wait until they cool to room temperature and then cut into whatever size treats you like.
