Is there an echo in here?

Yes, yes there is.

I've posted this Fruit Pizza recipe before, but that echo thing is in effect, so I'm posting it again. These sorts of things happen when I haven't cooked anything resembling food all week.

But! This stuff really is good, and it's super easy. It's so easy that I threw a Fruit Pizza together this morning in less than half an hour. It came together THAT fast, and yet looked like this.

That's some very serious voodoo magic right there.

Fruit Pizza

1 package Pillsbury sugar cookie dough (the tube)
2 packages cream cheese
2/3 cup sugar
1 teaspoon vanilla extract
assorted fresh fruit (sliced, if appropriate)--strawberries, blueberries, peaches, bananas, kiwi all work well
lemon juice

1. Preheat the oven to 350 degrees. Spray non-stick spray on a pizza pan or cookie sheet. You can also line the pan with foil, just make sure to do something to keep the cookie dough from sticking. Because it will. Badly.

2. Spread the cookie dough all over the pan.

3. Bake at 350 degrees until lightly browned, about 15 minutes.

4. Allow the crust to cool.

5. In a medium bowl, combine the cream cheese, vanilla extract, and sugar. Mix until well-blended.

6. Spread the cream cheese mixture over top of the cookie crust.

7. Top with fruit. Sprinkle the lemon juice over the top to help keep the fruit from turning brown. (Seriously, it's magical. Bananas will stay fresh and edible for a day or two when coated with lemon juice.)

8. Consider sharing, realize that's a very bad idea, and go hide somewhere and eat the whole thing by yourself.
