Sausage Teriyaki

Hey, remember when we were kids and everything got turned into a casserole? Whatever leftovers were in the fridge got thrown together and some cheese tossed on top and TAH-DAH! Dinner!

Bowls are the casseroles of the 2020's. Mark my words.

Got leftover veggies? That's fine. Toss them in a bowl with some sort of grain and protein and TAH-DAH! Dinner!

I'm in for this phase of life.

Sausage Teriyaki Bowl (aka So Fresh is SO GOOD, but So Expensive, So Now I Make It At Home)

2 tablespoons olive oil
1 red pepper, diced
1 yellow onion, diced
1 clove minced garlic
2 cups zucchini noodles
2 cups broccoli florets
4 cups prepared quinoa
Veggie sausages
Teriyaki sauce
Salt and pepper to taste

1. Prepare the quinoa according to the package instructions.

2. In a large skillet, heat the oil. Add the vegetables and sauté over medium heat until they are the texture/firmness you want. Add the salt and pepper.

3. Cook the veggie sausages according to the package instructions. I personally am on a bender with Field Roast brand (especially the Smoked ones), but any brand will do.

4. Serve with some quinoa and veggies in a bowl, topped with a sausage. Throw some teriyaki sauce on top.
