I still have too many strawberries, if such a thing is possible. I've made the Strawberry Shortcake Cupcakes, strawberry preserves, and fed the girls strawberries at every turn. And yet. They persist.
Couple that with the fact that the people in my house have finally learned to demonstrate some appreciation for the things I make, and you end up with this.
Strawberry Nutella Coffee Cake.
Basically, the people in my house like having something to grab to eat in the morning. Breakfast breads and such are apparently a good thing. So I obliged them. Mostly because I agree. Breakfast on the go is the best.
Strawberry Nutella Coffee Cake
Streusel
1/2 cup all-purpose flour
1/2 cup sugar
3 tablespoons cold butter, cubed
1. Combine the flour and sugar in a small butter.
2. Cut in the butter. I don't have a fancy mixer, so I use my hands and just squish it all around until I have a chunky texture. It doesn't have to be perfectly mixed--just mostly combined.
3. Set aside.
Batter
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup cold butter, cubed
2/3 cup strawberry yogurt (that's 3 Go-Gurt tubes, if you're fancy like me)
2 eggs
3/4 cup strawberry preserves
3 tablespoons Nutella
1. Combine the dry ingredients in a large mixing bowl.
2. Cut in the butter. Again, no fancy mixer here, so I mush it with my hands.
3. In a separate bowl, combine the yogurt and egg. Mix well.
4. Stir the wet ingredients into the dry ingredients until just moistened. The batter will be thick and kind of chunky. I think if very much so resembles soft Play-Doh.
5. Find a springform pan. Put half of the batter into the bottom of that springform pan.
6. Sprinkle all but 1/2 cup of the streusel on top of the batter in your pan.
7. Carefully spoon the strawberry preserves on top of the streusel, making sure to stay about 1/2 inch from the edge of the pan. Then drop the Nutella in little piles of amazing all around. It won't cover everything (not even close) and that's okay.
8. Carefully spoon the remainder of the batter on top of the strawberry preserves and Nutella. Don't worry if it doesn't totally cover all of the things as the batter will expand while baking, filling in your gaps.
9. Top with the remainder of the streusel.
10. Bake at 350 degrees for 50-60 minutes. It's done when you stab it with a toothpick and it comes out clean.
11. Allow it to cool for about 10 minutes. Slide a knife around the edge of the pan to free the coffee cake. Remove the sides of the pan.
Glaze
1/2 cup powdered sugar
2 teaspoons milk
1. Combine the powdered sugar and milk until they form a fun "icing."
2. Drizzle the glaze over top of the still-warm coffee cake.
3. Enjoy!
