Campfire Baked Apples
It's all Maggie's fault. On my post about these:
She mentioned in the comments that baked apples are really good when thrown on a fire. Which, WTH? Why didn't I think of that? I make baked apples fairly often, but it never once occurred to me that I should throw them in the fire pit or on the grill.
I accepted the challenge. After all, this is the summer of COOK IT WITH FIRE!
Campfire Baked Apples
Wash and core an apple (I used Red Delicious), doing your best to not go through the bottom of the apple.
Then fill that little hole with good stuff. I used 1/2 teaspoon cinnamon, 1 tablespoon brown sugar, and 1 tablespoon of butter all mixed together. Then I threw some raisins and crushed walnuts on top because, well, I had them on hand. There might have been a little extra cinnamon thrown on top as well because cinnamon is my lover.
Wrap the apple in foil.
And toss them into the fire.
The apples need to hang out in the heat until they soften, which for me was about 45 minutes.
Completely worth the wait!

We used to make these at Girl Scout camp. Thanks for reminding me how good they are.
Could you pretty, pretty please wait and post your FIRE! FIRE! cooking posts when it's not deadgrass and 35mph winds outside? I would like to not burn down my neighborhood and be all "I will never go hungry again!" at the end of the day. :) (Although those just might be worth it....)
