Cheesecake Tacos
Is there anything more perfect than a taco? Tacos don't require utensils and yet deliver an entire meal in a tiny little package. They've got all of the food groups and, really, they're perfect.

No. Seriously. You need to make these. They are fantastic and wonderful and I love the idea of doing a Taco Cheesecake Bar for a group gathering and letting people formulate their own version. They're super easy and the perfect dessert. Ask Mila. She agrees with me.
Cheesecake Tacos
One package street taco flour tortillas
1 8-oz package cream cheese
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1 tablespoon butter, melted
1 tablespoon granulated sugar
1 tablespoon cinnamon
Cheesecake toppings
1. Preheat the oven to 350° F. Mix together the cinnamon and 1 tablespoon granulated sugar.
2. Use a brush to coat each tortilla with melted butter. Sprinkle with the cinnamon/sugar mix.
3. Turn a muffin pan upside down. Fold each tortilla in half, sugar side in, and place in the space between the muffin bumps. You should have a bunch of taco-shaped shells.
4. Bake at 350 for 7-10 minutes. Allow to cool while still in their taco-shaped holding spot.
5. In a small bowl, mix together the cream cheese, 1/4 granulated sugar, and vanilla extract.
6. Spoon cheesecake mixture into each taco and then add toppings as you see fit. We tried fresh chopped strawberries, turtle (pecans, caramel, and chocolate), chopped Twix, crushed Oreos, and chocolate chips. There were no losers in this game, but HOOBOY THE TURTLE. YEEEEES.
