Day Two Hundred Thirty-Three

You know what makes my brain instantly stop being capable of intelligent anything? Thinking about winter with COVID-19 cases soaring. Can I just spend the worst of it on the couch staring at Netflix? Because that seems like the only thing I"m going to be capable of.

And, thus, I am finding my way to the easiest of the easy meals and desserts. Apparently my children expect me to continue to feed them even in the midst of all of this, so I'm finding my way all the way to the bottom of the complexity barrel.

Come with me. It's delicious here. It's just ... simple.

No Bake Dirt Cheesecake

1/4 cup butter
1 cup graham cracker crumbs
3 tablespoons granulated sugar
2 8-oz packages cream cheese, room temperature
3/4 cup granulated sugar
2 teaspoons vanilla extract
1 cup heavy cream
1 cup crushed Oreos
Handful gummy worms

1. Place the butter in a 9x9 oven-safe dish. Toss it in the oven while it heats to 375°. I know I said this was no-bake, but we are going to sort of bake the crust. I promise it's still easy.

2. Toss the graham cracker crumbs and 3 tablespoons granulated sugar together. Once the butter is melted, add them to the butter and press everything down nice and firm.

3. Bake for 5-6 minutes. Remove from the oven and allow to cool.

4. In a large mixing bowl, combine the cream cheese, sugar, and vanilla extract until smooth. Using a mixer on high, slowly add the heavy cream and beat until it's nice and smooth and fluffy.

5. Spread the cream cheese over the crust. Top with crushed Oreos and then toss some gummy worms on top of it all. Place in the fridge and allow to "set" for at least an hour.

6. Fight your kids for possession. Good luck.
