Fruit Pizza

I have spent the entire weekend momming. There was a dance competition (2 days!) and a cheer competition and a band thing and PUT A FORK IN ME, I AM DONE.

There will be no more momming.

Somehow I managed to throw together dinner (this, specifically), but that's where it stops. Which is why when one of my children (GUESS WHICH ONE) was all, "So what's for dessert? Can we have fruit pizza?" I summoned the internet and handed her a photo of fruit pizza and walked away.

No more momming, please. I'll be sure to show up for duty again soon, but not right now. I need to do some irresponsible introverting for a bit first.

Fruit Pizza (Reposted from this 2010 post, little Alexis photo and all)

You'll need:

  • 1 package Pillsbury sugar cookie dough (the tube)
  • 2 packages cream cheese
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • assorted fresh fruit (sliced, if appropriate)--strawberries, blueberries, peaches, bananas, kiwi all work well
  • lemon juice

Preheat the oven to 350 degrees. Spray non-stick spray on a pizza pan or cookie sheet. You can also line the pan with foil, just make sure to do something to keep the cookie dough from sticking. Because it will. Bad.

Spread the cookie dough all over the pan.

Bake until lightly browned, about 15 minutes.

Allow the crust to cool.

In a medium bowl, combine the cream cheese, vanilla extract, and sugar. Mix until well-blended.

Realize that the girl-child has discovered your blueberry stash and send the husband to buy more.

Spread the cream cheese mixture over top of the cookie crust.

Top with fruit. Sprinkle the lemon juice over the top to help keep the fruit from turning brown. (Seriously, it's magical. Bananas will stay fresh and edible for a day or two when coated with lemon juice.)

Start beating people off with a stick if you plan on getting a piece of it. It's within the Rules of Fruit Pizza to put electrified fencing and man-eating crocodiles to use as well.
