Greek Garbanzo Bean Salad

Alexis has always been a good eater, except for the fact that she hated baby food. That means I very quickly had to figure out a bunch of super lazy ways to appease her. At the top of the "lazy list" was garbanzo beans. I used to crack open a can, hand her a bunch, and be done with it. She would happily snack on them for days and days on end.

It's a good thing Mila is the same way because in the 8 years since Alexis was the same age, I have not become less lazy. Bring on the easy snacks and meals, please.

Seriously.

I've made this a few times in the past month or so and both times it's been a win. Mila picks through it to find all of the olives, cucumbers, tomatoes and garbanzo beans. Alexis mixes it all with leaf lettuce and declares it a "fancy salad." I'm happy either way.

Greek Garbanzo Bean Salad

2 cans garbanzo beans, drained and rinsed
1 small cucumber, diced
8-10 grape tomatoes, diced
1/2 cup kalamata olives
1 small bell pepper, chopped (I use a yellow one when I have one on hand)
1 small red onion, chopped
1/2 cup feta cheese (Shhhhh! Don't tell the cheese-hating Alexis! She hasn't realized it's in there.)
1 teaspoon dried oregano
1 tablespoon olive oil
1 teaspoon red wine vinegar
Salt and pepper to taste

1. These are going to be the most complicated directions ever. Prepare yourself.

2. Throw it all in a bowl together and toss.

3. That's it.

4. You can eat this alone like Mila does, or you can pour a scoop over a bed of lettuce like Alexis does. I also like it over quinoa. I feel like it would also be good with cold pasta. I haven't tried it yet, but I have a hunch cold tortellini would be the best.
