Grilled Salsa Potatoes

There's a rumor that is going around that summer is winding down which UNPOSSIBLE. It cannot be over! It just started ten minutes ago. I swear.

And yet, it's possible that I'm starting to run out of enthusiasm for grilling.

I KNOW. It does not seem like a thing that can be done, but here it is. I'm teetering on the edge of being ready for soups and stews and all of those inside foods. But, don't worry. I still have some grilling left in me. A little bit.

I definitely have some grilling left in me for this.

Pretty much any time potatoes, cheese, and salsa come together, it's a party. This is no exception. It's an easy variation on the old "foil pocket" potato thing. Basically, you throw a bunch of stuff on a big piece of aluminum foil, fold the foil around the stuff like a burrito, and throw it on the grill for a while. Good things happen while you wander elsewhere. In this case, your wandering can be to grab the cheese and salsa. When you put everything together? Happiness. Happiness happens.

Grilled Salsa Potatoes

1/2 cup chopped red onion
2 cups sliced potatoes (I like using "B" size yellow potatoes)
1 teaspoon season salt
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1 small can chopped green chile peppers (optional)
1 cup shredded cheddar or cheddar jack cheese
Salsa
Cilantro
Sour cream (optional)

1. Spread a large piece of foil on your counter. Spray it with some nonstick spray. Toss the onions and potatoes on top.

2. Place the season salt, chili powder, and cumin in a small bowl and whisk them together. Spread over top of the potatoes and onions.

3. Toss the green chile peppers in there, if you're using them.

4. Fold over the foil like you're folding a burrito.

5. Place the foil pack on the grill over medium heat. Cooking time will vary wildly since no two grills were created equally, but it took about 20 minutes for our potatoes to be the right amount of soft for eating.

6. Once the potatoes are soft, place the contents of your foil packet on a plate or in a bowl. Toss some cheese, salsa, and cilantro over top. Garnish with sour cream, if that's your sort of thing.

7. Vow to introduce salsa to potatoes more often. They're good together.

We aren't year round grilling people, but I know plenty who do.
