No Bake Fruit Lasagna
I HAVE A NEW FAVORITE AGE! It's Makes Me Delicious Foods Years Old. Some days it's the age that makes me cookies after dinner. Other days it's the age that makes me Fruit Lasagna. Either way, I win.
Kids are the best. Especially kids who rock the independence thing.

No Bake Fruit Lasagna (Alexis' name for it. Some people call it Icebox Cake.)
1 8-oz package cream cheese
2/3 cup granulated sugar
2 teaspoons vanilla extract
1 cup heavy cream
Graham crackers
Strawberries, hulled and sliced
Blueberries
1. In a large mixing bowl, use a mixer to beat the cream cheese, sugar, and vanilla until smooth. Gradually add the heavy cream and beat a little longer. After about 2-3 minutes, it will stiffen and peaks will form.
2. In a glass 9" square pan (glass so you can see the pretty layers), place a layer of graham crackers at the bottom. Top with a layer of cream cheese, then strawberries, and then blueberries.
3. Repeat until you run out of cream cheese stuff. I tend to end up with 4 rounds of layers, but Alexis gets 3. It all works, just so long as you end with fruit on top. Because pretty.
4. Cover and refrigerate for at least 2 hours prior to serving.
