Easy Apple Crisp

Today's meals included zucchini, tomatoes, peppers, and plums from our yard as well as potatoes and onions from a local farm. Then we went and picked our own apples at a cute little orchard, so basically you can call me Laura Ingalls Wilder because I am all up in this farmer life.

Or something. Why are bugs a thing? That's always my question when I've been outside.

While I won't be living off the land anytime soon, picking apples was pretty fantastic. It's always fun watching kids figure out where their food comes from and Mila was all sorts of ::MindBlown:: when she discovered that apples come from trees and she can pick them.

She was so enthused about the whole thing that she picked ALL of the apples. She's faster than any machinery every could be, which means I ended up with more than enough apples to make applesauce. WAY more than I needed.

Way, way, way, way more.

So while I peeled and sliced the 8 million apples Mila picked, I suggest that Alexis make Apple Crisp. I figured it's time for her to expand her culinary skills beyond eggs and Rice Krispies and HOOBOY did it make her happy. Independence is fun, n'at.

The biggest trick between this and other crisp recipes is that the butter is melted. I didn't want Alexis to have to figure out how to use cold butter just yet. Next time, maybe. (Probably not. I like the melted stuff better in the end.)

Easy Apple Crisp

8-10 apples, peeled, cored, and sliced
1 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup water
1 cup quick oats
1 cup all-purpose flour
1 cup brown sugar, firmly packed
1/2 teaspoon baking powder
1/2 cup butter, melted

1. Preheat the oven to 350 degrees.

2. Place the sliced apples in a 9x13" glass baking pan.

3. In a small mixing bowl, combined the sugar, cornstarch, nutmeg, cinnamon, and water. Spread over top of the apples and toss lightly.

4. In a medium mixing bowl, combine the oats, flour, brown sugar, and baking powder. Whisk to combine then add the butter and stir until well blended.

5. Spoon the oats and such over top of the apples.

6. Bake at 350 degrees for 45 minutes, or until the apples soften and the top is lightly browned.

7. Allow to cool for a few minutes then serve with vanilla ice cream. Make sure to hide while you eat yours so that you don't have to share it with children.
