Baked Goblin Guts

I walked into Wal-Mart and immediately saw them--the most perfect cupcake liners of all time. I HAD to have them. It's the law in at least 39 states. Once I was in compliance with the law, of course I had to make cupcakes. DARN.

I decided to take it one step further and make Baked Goblin Guts cupcakes. In a perfect world, that would have involved white cake mix and some green food coloring, but I don't live in a perfect world. I live in a world where chocolate cake sounded like a really, really, really good idea. So let's just pretend the cake batter was green as you look at these, mmkay?

Baked Goblin Guts

  • 1 box cake mix--any kind works, but white with green food coloring added is most appropriate
  • 1 can cherry pie filling
  • frosting, sprinkles, etc.

Prepare the cake mix according to the instructions on the box. Or, if you're super fancy and have the time, make some cake batter from scratch. Whatever makes you happy.

Fill the cupcake liners half as far as you normally would. Spoon one tablespoon of cherry pie filling into each cup, then fill the cupcake liner the rest of the way up with cake batter.

Bake according to the directions for your cake mix. Once cooled, decorate however you want.

Optionally, you can get into a fight with your 4-your old about whether or not some of the finished cupcakes are going to school so that she can share with her friends. If you decide to cave in, you should probably test a Baked Goblin Guts cupcake first, just to be safe.

Actually, you should test two. Just to be extra safe.

Saw the same ones . . . but since I have been banned from baking cupcakes (seriously recovering from a weekly cupcake baking disorder), I grabbed the cookie cutters (leaves) and the fall-themed sprinkles.

I think I have an addiction to sprinkles. . .

So, only test two, huh?

Nom, nom, nom. My sister makes vampire cupcakes - chocolate cuppacakes filled with raspberry puree. She covers them with frosting, stabs the top, and uses red food coloring to make them look like they're bleeding. Isn't Halloween so much fun to bake for? :)

Huh. I make those for valentines day parties, but I use a brownie mix instead and no frosting and sprinkles. Love the name you gave them!

oooh, nice. We just baked cupcakes too for school. Ours though only have gummy body parts on the top. Yours are way prettier!
